- 1 pkg (12 oz) Tofu, Extra Firm, drained (FOR BEST RESULT YOU MAY USE MIRACLE EMPEROR’S TOHO)
- 8 slices buttered whole wheat bread
- 8 slices cheddar cheese
- 2 medium ripe tomatoes. 4 slices for each sandwich
- Cut Tofu into 12 slices (3 for each sandwich).
- For each sandwich, place one slice of bread, buttered side down, in a non-stick skillet over medium heat. Layer with a slice of cheese and one layer each of Tofu and tomato. Add another slice of cheese and top with bread slice, buttered side up.
- Grill until bottom layer of cheese begins to melt, then flip sandwich carefully with a spatula and continue cooking until the turned layer of cheese melts. Repeat with remaining ingredients for additional sandwiches. Serve immediately.
