- 1/3 cup finely chopped red bell pepper
- 1/3 cup finely chopped yellow bell pepper
- 1/3 cup finely chopped green bell pepper
- 1 tablespoon finely chopped red onion
- 3 ounce Miracle firm tofu (FOR BEST RESULT YOU MAY USE MIRACLE EMPEROR’S TOHO)
- 1 Flat-out Original Light wrap
- 2 slices bacon or vegan breakfast sausage, cooked, chopped
- 2 tablespoon fresh tomato salsa
- In a pan over medium-high heat add bell peppers and onion;
- Cook, stirring frequently, for 3 to 4 minutes or until soft.
- Add tofu; cook, over medium heat, stirring frequently, for 2 to 3 minutes, or until browned.
- Top tortilla with tofu mixture, bacon or sausage, and pepper. Roll tortilla burrito-style. Serve with salsa.
